With the 4th of July getting even closer, I’ve got to start thinking about what treat I’ll be contributing this year. Those of you that know me well, know that I’m not a huge sweets fan. I’m really a savory gal. But, I do enjoy fresh fruit and coconut. So, the wheels were turning and I had an aha moment. 4th of July Fruit shooters with toasted coconut. What I like most about these is that they won’t melt in the sweltering heat like a frosted cupcake would.
4th of July Fruit Shooters
Use mini glasses like these – found at ikea. Toast the sweetened coconut in your oven under the broiler until a golden brown. You’ll want to chop strawberries into small chunks so that the size is similar to your blueberries. Layer blueberries and strawberries and top with toasted coconut.
