Cardamom Streusel Cakes

If there is one thing you need to know about me, it is that I love cardamom. I could use it in almost everything I bake. I don’t but I love to make these Cardamom Streusel Mini Cakes any time I have a craving.

These little cardamon streusel cakes are perfect for dessert, tea, or coffee. And they are so easy to make. If you haven’t baked with cardamom before, I recommend trying it. But if you don’t have some in the pantry, or don’t love it like I do, feel free to swap in cinnamon (in the same quantities) to make this a cinnamon-y cake.

Cardamom Streusel Mini Cakes

(makes enough for 8 mini cakes using a mini loaf pan or one small bundt cake)

-preheat oven to 350

-in a large bowl, cream 1 stick softened butter with 3/4 cup granulated sugar

-add 1 egg, 1 teaspoon vanilla extract, and 1/2 cup yoghurt or sour cream

-in a medium bowl, mix the following dry ingredients- 1 1/4 cup flour, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, 2 teaspoons cardamom (or cinnamon), and 1/2 teaspoon salt.

-add dry ingredients to butter mixture and mix until well incorporated.

-pour into prepared pans

-top with streusel mixture- mix together 1 1/2 cups flour, 1/2 cup brown sugar, 1 stick softened butter, 1/2 teaspoon cardamom (or cinnamon) until crumbly

-bake for approx 35-40 minutes (increase time if using one pan).

-test with toothpick to ensure cake is baked through (no wet cake batter on toothpick after inserting in center).

-remove from oven, cool on wire rack for 15 minutes, remove from pan and allow to cool completely before serving.

May be served with cream cheese frosting or as it is. Enjoy!
