Pina Colada recipe with a fun twist

Pina Coladas aren’t terribly difficult to make, but do require breaking out the blender. Let’s be honest, using the blender is a hassle. I’d rather just put a quick drink together and hit the pool. So, this got me thinking! The solution is tasty and eye catching. This pina colada recipe requires a short list of ingredients and takes just a minute to mix up. It also incorporates a summer favorite, the popsicle! The popsicle acts as a garnish but also adds a lot of flavor and depth to the drink.

Ingredients

  • Coconut Rum
  • Pineapple Juice
  • Coconut Popsicles
  • Pineapple wedges

Instructions

  1. In a Shaker, shake 1.5 oz of coconut rum with 4 oz of pineapple juice.
  2. Pour in a highball glass and garnish with Popsicle and pineapple wedge.

The result stays chilled for a while as the coconut Popsicle continues to melt into the cocktail. I’m a huge fan of this pina colada recipe,  because the cocktail is a little lighter than a traditional pina colada and perfect for the summer months. Mix up this cocktail for a girls day by the pool, I guarantee you they’ll be impressed with this beverage!

This beverage could also be made into a virgin pina colada recipe by skipping the rum and just pouring pineapple juice in a tumbler and garnishing with the coconot popsicle and a pineapple wedge.
